If you are looking to spice up your dinner this recipe is perfect. With all of the wonderful flavors your family will be asking for more. 

Ingredients

  • 3 pounds Chicken Winglets
  • 1 bay leaf
  • 1 carrot (diced)
  • 1 celery (diced)
  • 2 tbsp garlic powder
  • 1 green bell pepper (diced)
  • 1 yellow onion (diced)
  • 1 tbsp parsley
  • 10 sprigs of fresh thyme
  • 2 chicken bouillon cubes
  • 2 tsp Worcestershire sauce
  • 3 tsp black pepper
  • 3 tbsp cajun seasoning
  • 6 tsp cornstarch
  • 5 tbsp water
  • 3 tbsp creole seasoning
  • 3 tbsp olive oil
  • 6 cups of chicken broth
  • 2 roma tomatoes (chopped)

Instructions

  1. Place add 1 tbsp of oil, 2 tbsp cajun seasoning, 2 tbsp creole seasoning, carrot, celery, onion, and bell pepper into a food processor or blender. Process until all ingredients are chopped finely.
  2. Place chicken in a gallon size freezer bag add 1 tbsp of cajun seasoning and garlic power. Shake to cover.
  3. Add vegetable mixture to chicken and shake to cover. Allow to marinate for 4-24 hours.
  4. Before cooking remove chicken from refrigerator and allow to sit for out for 15 minutes.
  5. In a large sauce pan heat 2 tbsp of olive oil over medium high heat. Brown chicken on each side, about 5 minutes per side. 
  6. Once all chicken is browned remove from pot add vegetable mixture from freezer bag.
  7. Add chicken broth, Worcestershire sauce, parsley, remaining creole seasoning, bouillon cubes, and black pepper. Stir to mix ingredients. Allow to simmer for 10 minutes.
  8. In a small bowl mix cornstarch and 5 tbsp of water.
  9. Whisk cornstarch mixture into saucepan and allow to begin to thicken. Add thyme, bay leave and chicken back to pan, allow to cook on medium heat for 45 minutes.

Notes

If you are not one that likes all of the seasoning you are more than welcome to substitute the creole seasoning for pink Himalayan salt or whichever you prefer.
