Blueberry Brioche Stuffed French Toast

This is a sweet and fruitful addition to your breakfast that is rich in savory flavors! It is great for kids and they will ask you to make this every morning. 

Ingredients

  • 8 Slices of brioche bread
  • 1- 8oz package of cream cheese
  • Carmel Macchiato coffee creamer
  • White sugar
  • Brown sugar
  • Cinnamon
  • Vanilla
  • Eggs
  • Butter
  • Blueberries
  • Powder sugar for garnish
  • Cream cheese filling
  • 1- 8 oz package room temperature 
  • 1/4 cup of sugar
  • 1 teaspoon vanilla 
  • 1 tablespoon cinnamon 
  • 2 tablespoon creamer
  • Mix until all ingredients are combined 
  • French toast mixture 
  • 2 Eggs
  • 1 1/2 cups of caramel macchiato creamer 
  • 1 tablespoon of vanilla 
  • 1 cup of sugar 
  • 1/4 cup brown sugar 

Instructions

    Cream cheese filing

    1. In a medium size mixing bowl mix together cream cheese, sugar, vanilla, cinnamon, and creamer until all ingredients are mixed together. Set aside.

    French Toast Mixture

    1. In a large mixing bowl mix together eggs, creamer, vanilla, sugar and brown sugar. Mix until eggs are fully beaten. Set aside.

    1. After you have mixed both mixtures take 8 slices of the brioche bread and cut off the sides and ends. Once you have done that then take a rolling pin and roll out each piece of bread until they are flat. 
    2. Next take a butter knife and put a smooth 1 inch layer of cream cheese on each slice of bread covering the entire side. 
    3. Then place 6-8 blueberries in the middle in two rows of 3 or 4 depending on the size of the bread. Roll each one up. 
    4. Heat 2 tablespoons of butter in a medium size frying pan over medium heat. Once the butter is melted dip french toast into batter and place in frying pan. I cook four in the pan at a time. 
    5. Brown on each side 2-3 minutes. Remove and sprinkle with powdered sugar.
