If your children don’t like squash but love cheese, make this for them. With all of the cheese and flavors this dish has they will ask for seconds

Ingredients

  • 5 large yellow squash (Sliced medium)
  • 2 tbsp Pink Himalayan salt
  • 2 tbsp fresh ground black pepper
  • 24 ounces freshly graded cheddar cheese
  • 5 mini packs of ritz crackers
  • 2 tbsp butter
  • 1/2 cup butter (melted)

Instructions

  1. Preheat oven to 350 degrees.
  2. Grease 9x15 baking dish.
  3. In a large frying pan melt 2 tbsp of butter over medium heat add squash salt and pepper, allow to cook for 10 minutes or until squash is soft but not mushy.
  4. Remove from heat and drain excess water from pan.
  5. Pour into a large mixing bowl and add cheese. Mix together and then pour into greased baking dish. Set aside.
  6. Place 5 packs of ritz crackers into food processor or blender and mix until all crackers are broken up.
  7. Pour crackers into a bowl and mix 1/2 cup of melted butter into bowl until it is fully mixed.
  8. Spread mixture over squash. Bake covered for 30 minutes.
  9. Remove foil and bake for 10 minutes to allow cracker mixture to become crispy.
  10. Allow to cool for 10 minutes before serving.
