Ingredients
- 5 large yellow squash (Sliced medium)
- 2 tbsp Pink Himalayan salt
- 2 tbsp fresh ground black pepper
- 24 ounces freshly graded cheddar cheese
- 5 mini packs of ritz crackers
- 2 tbsp butter
- 1/2 cup butter (melted)
Instructions
Preheat oven to 350 degrees.
- Grease 9x15 baking dish.
- In a large frying pan melt 2 tbsp of butter over medium heat add squash salt and pepper, allow to cook for 10 minutes or until squash is soft but not mushy.
- Remove from heat and drain excess water from pan.
- Pour into a large mixing bowl and add cheese. Mix together and then pour into greased baking dish. Set aside.
- Place 5 packs of ritz crackers into food processor or blender and mix until all crackers are broken up.
- Pour crackers into a bowl and mix 1/2 cup of melted butter into bowl until it is fully mixed.
- Spread mixture over squash. Bake covered for 30 minutes.
- Remove foil and bake for 10 minutes to allow cracker mixture to become crispy.
- Allow to cool for 10 minutes before serving.
